Oatmeal Berry Cobbler

OATMEAL-BERRY COBBLER

1 cup uncooked oatmeal

1 Tbsp Coconut sugar

1-2 tsp cinnamon

2 tsp butter, ghee or coconut oil

1 cup blueberries

1 cup raspberries

½ cup craisins, dried cranberries or raisins (optional)

¼ cup fresh squeezed orange juice (or not from concentrate version)

 

YOGURT TOPPING

2 cups plain Greek yogurt

2 tsp raw honey

1-2 tsp organic vanilla extract

Mix together oatmeal, coconut sugar, cinnamon and butter until crumbs form.  In baking pan, combine blueberries, raspberries, dried fruit and juice.  Top with the crumb mixture and bake for 20 minutes at 350 degrees F.  While the cobbler is baking mix together the yogurt, raw honey, and vanilla extract. When cobbler is done top with yogurt mixture and enjoy!
